Malic acid contains an asymmetric
carbon atom, it can exist in three forms, a dextro-rotatory,
a levo-rotatory and an inactive form; the acid obtained
in the various synthetical processes is the inactive
form.
L(-)-malic Acid, an organic acid found abundantly in
the juices of many plants, particularly in mountain-ash
berries, in unripe apples and in grapes.
L(-)-Malic Acid JP VII
As an acidulant, L-Malic acid is especially suitable
for jelly and foodstuffs containing fruit ingredient.
It can keep the natural color of juice. Used in healthy
drinks, it can resist fatigue and protect liver, kidney
and heart. L-Malic acid can enhance pharmaceutical stability
and improve pharmaceutical absorption. It can be added
into composite amino acid injection, directly participating
the metabolic cycle of organism-Krebs cycle. It can
reduce the metabolic loss of amino acid and can compensate
hypohepatia, cure uremia and hypertension, and weaken
the damage of anticancer drug to normoblasts. It is
also used in skin disinfector, air depurative and deodorizer.
D(+)-Malic Acid FCC IV
It is mainly used in many fields including chiral pharmaceuticals,
chiral additives and chiral auxiliaries. It is used
as chiral pool of chiral synthesis in pharmaceutical
and food industries. As an optically active organic
acid, it is insubstitutable in asymmetry synthesis of
some chiral compounds.
DL-Malic Acid
DL-Malic acid can be used as an acidulant in cool drinks
(including lactobacillus drinks, milk drinks, carbonated
drinks, cola), frozen foods (including sherbet and ice
cream), processed foods (including wine and mayonnaise).
It is used as color-keeper and antiseptic of juice.
It is also used as emulsion stabilizer of egg yolk.
DL-Malic acid also can be used as pharmaceutical intermediate,
cosmetic, rinse.
