Monosodium glutamate (also
known as sodium glutamate, MSG) is a sodium salt of
the non-essential amino glutamic acid. Commercial MSG
is produced by fermentation of starch, sugar beets,
sugar cane or molasses. It exists as enantiomers, only
the L-glutamate enantiomer has flavour-enhancing properties.
MSG is used as a flavour enhancer. MSG is often used
by many fast food chains and in many foodstuffs, particularly
processed foods.
