Sodium gluconate is the sodium
salt of gluconic acid, produced by fermentation of glucose.
It is a white, granular to fine, crystalline powder
which is very soluble in water. It is non-corrosive,
non-toxic and readily biodegradable.
Sodium gluconate is used as sodium supplement in food
to prevent and cure syndromes cused by sodium deficiency.
Sodium gluconate can be used as salt substitute to produce
low salt or no salt (sodium chloride free) foods, it
is no pungency, no bitterness, no acerbity, the salted
taste is close to salt (sodium chloride).
Sodium gluconate is an excellent taste improver, it
can conceal the bitterness of trace metals, such as
magnesium, zinc, iron, etc. and it can also conceal
the undesirable odor, such as soybean protein flavor.
Sodium gluconate can be used as an acidity regulator
(buffering agent).
In pharmaceutical, sodium is important in maintaining
the osmotic pressure and volume of extracellular fluid,
balancing the acid-base in human body and restoring
normal function of nerve-muscle.
