Xanthan gum, mainly made from
starch, is a high molecular weight polysaccharide produced
by fermentation of glucose or sucrose with xanthomonas
campestris bacterium. the main compositions of xanthan
gum are d-glucopyranose glucan, d-mannose and d-glucuronic
acid. (the main chain of polysaccharide consists of
two ¦Â-D-glucose units linked through the 1 and 4 positions.
The side chain consists of two mannose and one glucuronic
acid, the chain consists of repeating modules of five
sugar units. About half of the terminal mannose units
have a pyruvic acid group linked as a ketal to its 4
and 6 positions, the other mannose units have an acetyl
group at the 6 positions).
Xanthan gum is widely used as a stabilizer, emulsifier
and thickener in foods such as salad dressings, sauces,
frozen foods (ice creams), beverages and dairy products
,also used in toothpaste, gluten-free baking.
Some people are allergic to xanthan gum, with symptoms
of intestinal gripes, diarrhea, temporary high blood
pressure, and migraine headaches.
